Handmade Pasta 101
This lesson is for all pasta lovers, perfect for all skill-levels, and requires no special tools or equipment.
This class will go over everything you need to know about flour & water pasta dough, making various styles of cavatelli, orecchiette, and pici by hand, and culminating in a cooking of a complete dish.
No Special Tools Required
*For this class to act as a real-time cook along, the dough must be made in advance and given ample time to rest. If you are not familiar, Chef Joe can demonstrate the dough making and kneading upon request. During the lesson, he will have an additional dough prepared, rested and ready for the demonstration.

Noodles
There is a process and technique to making ribbon noodles. Chef Joe will show you the steps and fundamentals for making this classic dish, from start to finish.
It can be argued that it is the dough that makes or breaks the pasta. One of the secrets to luxurious noodles is having the perfect dough.
Going into his bag of tricks, Chef Joe shares his favorite dough recipes for egg-yolk tagliatelle.
Not everyone has the time (or energy) to knead dough the old-fashioned way, by hand. Instead learn a few modern shortcuts and adjustments for how-to let your stand-mixer do most of the work for you.
This lesson is for all skill-levels, and will be using a KitchenAid stand mixer, as well as the pasta sheeter attachment.
*To make the most of your time, it is beneficial to have the dough made and rested in advance.

This class will go over everything you need to know about making a perfect egg pasta dough for tortellini, how to create the classic tortellini filling al Bologna, the secrets to shaping and creating the pesky tortellini fold, and the basics of finishing the dish in an traditional brodo or fancy butter sauce.
Have you ever wondered what separates an everyday tortellini from an out-of-body tortellini experience? It’s what goes into it, of course! But really, we are talking about the filling. Learn Chef Joe’s personal tortellini filling recipe, passed on to him from generations old technique, shared by Italian nonnas from Bologna, Italy.
Pasta Sheeter and Stand Mixer Preferred
Filled Pasta 101
This class will go over everything you need to know about making an egg yolk pasta dough, Joe's favorite three ingredient filling, sheeting dough, and making tortelli, scarpinoc, caramelle, and a variety of other shapes, all by hand.
This all culminates in a cooking tutorial highlighting the basics of a pan emulsion, using butter and pasta water. This lesson is for all skill-levels, and will be using a KitchenAid stand mixer and pasta sheeter.

Taste The Rainbow
This class will go over everything you need to know about making Chef Joe's striped and multi-colored or speckled egg-yolk pasta dough. Using vegetable powder to color and flavor doughs, how to create unique striped multi-colored patterns in pasta shapes, the secrets to a perfect spinach & ricotta filling, the steps to sheeting, laminating, filling and shaping.
*Colors and patterns can be added to any of the previously listed lessons
